You may have thought your days of enjoying Colorado’s freshest fruits and vegetables were finished but think again my friends. The tradition of the farmers market season lives on through a small produce stand on the side of road in Edwards. Over the past few weeks a man named Darwin has filled his truck with the finest Grand produce he can get his hands on and brought them to the Vail Valley. Look for him on the east side of Arrowhead on Highway 6. His small market has vast options. Look for sweet peaches, crisp Gala and Jonathan apples, green beans, plums, delicious corn and acorn squash. Darwin says he will continue to set up as long as he can find Palisade peaches. So stop on by and continue to support our Colorado farmers.
Peach Vinaigrette
Peach vinegar will keep in the refrigerator for month. So you can enjoy the delicious flavors of the Palisade for most of the fall season.
3 Pounds Peaches, pitted & roughly chopped
2 Cups White Wine Vinegar
2 Tablespoons Sherry Vinegar
½ Cup Agave
1 Tablespoon Shallot, chopped
1 Tablespoon Dijon Mustard
½ Teaspoon salt
½ Teaspoon Fresh Cracked Pepper
½ Cup Canola Oil
½ Cup Olive Oil
o Bring peaches, white wine vinegar, sherry vinegar and agave to a boil, lower to a simmer and cook for 20 minutes. Remove from the heat and let cool in the refrigerator for 12-24 hours
o Blend in small batches and strain through a fine strainer or sieve
o To make the vinaigrette, mix ½ cup of peach vinegar with the mustard, salt and pepper
o Then slowly whisk in canola and olive oils
o Mix in shallots right before serving
Last Chance Summer Peach Salad
Serves Four
2 Cups Grilled Chicken Breast, Cubed
2 Peaches, Thickly Sliced
4 oz Colorado Cherve
1 Cup Almonds, Slightly Crushed
6 Cups Mixed Greens
½ Cup Palisade Peach Vinaigrette
Salt & Fresh Cracked Pepper
o In a bowl mix Palisade Peach Vinaigrette with mixed greens and a pinch of salt and pepper
o Separate the mixed greens onto four separate plates, top with chicken, peach slices, cherve and almonds
o Drizzle with a small amount Peach Vinaigrette
